Garlic Butter Chicken with Roasted Potatoes & Green Beans

Ingredients

  • 4 boneless, skinless chicken breasts

    Chicken breast cuts
  • 1½ pounds baby Yukon Gold potatoes, halved or quartered

  • 2 cups fresh green beans, trimmed

  • 4 tablespoons unsalted butter, melted

  • 3 tablespoons olive oil

  • 5 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon Italian seasoning

  • ½ teaspoon dried thyme

  • ½ teaspoon black pepper

  • 1 teaspoon salt (or to taste)

    1. Preheat and Prepare

    Start by preheating your oven to 400°F (200°C). Lightly grease a large baking dish or casserole pan. This helps everything roast instead of stick.

    2. Season the Potatoes

    In a large bowl, toss the halved potatoes with 1 tablespoon olive oil, half of the minced garlic, salt, pepper, thyme, and a pinch of paprika.

    Use your hands or a spoon to coat them well — you want every piece glossy and seasoned. Spread them out evenly in the baking dish.

    3. Give the Potatoes a Head Start

    Slide the dish into the oven and roast for about 15 minutes. This little head start ensures they come out tender inside and beautifully golden outside.
